Gelatine sheets, or gelatin leaves, are an odourless, colourless thickener used to turn liquids into jellies, and purées into mousses. These large sheets are used in professional kitchens, so are most likely to be the right size for recipes in restaurant cook books.
The ‘gold’ label denotes a ‘180 bloom’ – a system used to rank the strength of gelatin, and the quantities needed to set different dishes. This strength is a great for all round use.
