Terre Exotique’s grey salt is a fine finishing salt from the French island of Isle de Rhé. To pick this salt, the farmers work in harmony with the coastal conditions – a thin crust of white crystals form on the salt pond’s surface when water evaporates thanks to the sun and light breeze. If the salt doesn’t get collected, it sinks to the bottom of the pond during the night, crystalising and forming coarse sea salt.
With a light pink hue, violet-like scent and delicate, snowy texture, this salt is wonderful at enhancing the flavour of ingredients. Add to boiling water when cooking pasta, use as a rub for roast chicken, or sprinkle over buttered baguettes.Â
